Chicken Burrito Protein Bowl
I found this recipe online, a tweaked it a little bit, and I am obsessed! I shortened my version for quick reference so you donβt need to read through multiple pages, but HERE is the original recipe.
INGREDIENTS
INGREDIENTS FOR CHICKEN AND MARINADE (1x serving):
1 chicken breast
Juice from 2 limes
3 minced cloves of garlic
1 1/2 teaspoon garlic powder
Pinch of salt
1/4 cup avocado oil
INGREDIENTS FOR CILANTRO LIME RICE
1 cup long-grain white rice
2 cups water
Pinch of salt
Juice from 2 limes
1/4 cup fresh chopped cilantro
TOPPINGS:
Romaine lettuce
Diced roma tomatoes
Diced avocado
Cooked corn
Black beans
Chopped red onions
INSTRUCTIONS
INSTRUCTIONS FOR CHICKEN:
Add all of the marinade ingredients into a bowl and combine. Add in the chicken strips and let marinade for at least 15 minutes. Heat a large pan over medium-high heat and add a tablespoon of avocado oil. Add marinated chicken into the pan until cooked through, about 5 minutes.
INSTRUCTIONS FOR CILANTRO-LIME RICE:
Boil the water and add salt. Add the rice to the pot once boiling and then simmer on low for 20 minutes, until rice is tender and the water is absorbed. Fluff with a fork and then add in the lime juice, cilantro, and additional salt to taste.
Assemble
Arrange the rice and lettuce in the bottom of the serving bowl and top with chicken, diced tomatoes, diced avocados, corn, black beans, and red onions. Dish can be served both hot or cold according to preference.
